Introduction

I had white rice on hand, but brown rice would be more heart-healthy. I had white rice on hand, but brown rice would be more heart-healthy.
Number of Servings: 4

Ingredients

    1 lb. boneless pork chops
    3/4 c. uncooked long grain white rice
    1 stalk celery, chopped
    1/2 onion, sliced
    1 1/2 c. water, boiling
    2 t. low sodium chicken bouillon granules
    1 t. italian seasoning blend
    dash salt
    1 T. olive oil

Directions

Makes 4 servings.

Spray an 8x8 pan with cooking spray. Put rice in bottom of pan with celery. Put slice onion on top of rice.
Brown pork chops in olive oil in a skillet over medium-high heat. Place pork chops on top of onions.
Mix bouillon, seasoning, and salt into boiling water. Stir to dissolve. Pour water over pork chops.
Cover with foil. Bake at 350 degrees for an hour, or until rice is done and pork chops are tender.

    Tasted good. It was a mild, but full flavor. Would be easy to modify with more spices if you wanted. The rice just soaks up the flavor.

    very easy to make. I took users advice and added more seasoning. I used Mrs. Dash Table Blend and Italian Seasoning Blend plus I added rosemerry. I added all these in the boiling process and rubbed onto the pork chop. very good! - 4/13/09

    This was excellent. I left out the celery, just because I don't like it. The chops were super tender! My family liked it too. And it was great for a leftover lunch the next day! - 9/26/08

    My son thought the pork chops were incredible. He likes tender meat. The rice turned out fine. For me it was a little bland it needs some more spice and seasonings added. - 3/30/09
