Ingredients

    Egg, fresh, 2 cup (4.86 large eggs)
    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Onions, raw, 0.7 cup, chopped
    *Crisco Pure Vegetable Oil, 2 tbsp
    Salt, 1 tsp
    Mozzarella Cheese, part skim milk, 4 oz

Directions

Add oil to pan then add onions. Fry onions till golden brown. Mean while mix all your egg's into a bowl and set aside. Next add 1 cup chopped tomatoes to the onions to fry. Roma tomatoes are best. Fry for two minutes or untill tomatoes are completely soft and limp. Then add your egg mixture and salt. Note* You do not need to add water or milk to your egg's in this recipe. Mix your eggs and ingredients well and scramble the whole mix. The mixture will take about 5-7 minutes to cook all the way through. You will want to cook it on medium low. Once your egg's are mostly done top the mixture with your mozzarella cheese. Turn off the pan and leave sit for two minutes for the cheese to melt and for the eggs to stick a little. Divide the pan into four quarters and each quarter is one serving. This is often used as a lunch and dinner recipe in our home as it is very filling and very quick to make.
