Ingredients

    1-1/3 cup water
    2/3 cup apple juice (unsweetened)
    1/2 cup canned pumpkin (unsalted)
    1/3 cup snipped dried apples (approx 3 rings)
    1-1/2 cup quick-cooking oats
    1 TBSP packed brown sugar
    1 tsp ground cinnamon
    1 tsp nutmeg



Tips

I sometimes garnish my oatmeal further with chopped walnuts, more cinnamon, dried cranberries, ground flaxseed etc...
This is also a good recipe to make and store in the fridge for up to 4 days...makes for a great quick grab for busy mornings!!!


Directions

in a medium saucepan combine the water, apple juice, pumpkin and dried apples.
bring to boiling.
in a small bowl combine oats, brown sugar, cinnamon, nutmeg.
add to boiling oat mixture all at once; cook and stir uncovered for 1 minute.
divide oatmeal among 4 bowls.

Serving Size: makes 4 (3/4 Cup) servings
