Ingredients

3 Mashed Bananas
1C Chopped Dates
1C Dried Cherries/Craisins
1/2C Pecan Bits
1/4C Enjoy Life mini choco chips (vegan/gluten free)
1 Vanilla Bean (or extract to flavor)
1C Oats
1/4C Unsweetened Dried Coconut

Directions
Mash bananas in a large bowl & set aside
Fill medium bowl with coconut (can use more than 1/4C) & set aside
Chop about 9-10 dates to fill a 1C cup
Measure out dried fruit, pecans & mini chips
Add dates, dried fruit & chips to mashed bananas & stir
Split vanilla beans & scrape insides into mixture (or add extract)
Break down oats in a food processor & add to banana mixture
Use hands to mix & make medium sized balls, flatten balls to patties & coat in coconut
Place in refrigerator & ENJOY!
Serving Size: Makes 24 'cookies'
