Ingredients
-
2 tomatoes, chopped
1 avocado, cubed
1/4 cup sliced black olives
1/4 cup chopped pecans
2 T. light balsamic vinaigrette (I use Newman's Own Lighten Up! Balsamic Vinaigrette, but you could really use any kind of light vinaigrette that you like.)
Salt and pepper to taste.
Directions
Combine all ingredients and enjoy! This salad tastes great immediately, or you can let it marinate for a while. Of course, if you like it as much as I do, it won't last long enough to marinate!
This recipe is the result of me trying to duplicate a recipe my mother-in-law made, which she copied after trying some at a party. So, I don't know what it's really called or where it originally came from, but whoever you are out there - thanks! I love it!
