Ingredients

    1 Cup yellow onion, chopped
    4 cartons Chicken Broth Imagine Organic Low Fat Low Sodium, (16 cup)
    3 cartons Imagine Low Sodium Vegetable Broth, (12 cup)
    3 tbsp Celery seed
    5 bay leaves
    4 tsp Garlic Powder
    2 tsp Lemon & Pepper Seasoning
    1 tsp cayenne
    5 cup Carrots, chopped
    2 C Wild Harvest Organic Thai Jasmine Rice
    de-boned Costco Rotisserie Chicken
    2 cans Corn; Sweet Corn Cream Style
    6 cup Spinach, fresh, chopped carefully

Tips

You can use diced celery (about 3 cups) instead of the celery seed.
Spices are approximate as I just dump and sprinkle to my liking.
I like to chop my spinach leaves small so they don't get slimy, I hate slimy spinach, so don't overcook them!


Directions

Saute onion on med high in large stock pot. When translucent, carefully add stocks. Add seasonings and bring to a boil on high. Add carrots and rice. Turn heat down to med high. Stir and do so occasionally. Cook for about 12 minutes. Test carrots and rice for desired tenderness. Remove from heat. Add chicken, corn and chopped spinach. Serve. Salt and pepper to liking.

    Very Good
    I liked it. The kids didn't. THey prefer blended soups and corn and chicken blended changes quite a lot the texture of the soup but it tastes great. I left out the vegetable broth and just added some vegetables like celery and potatoes to it. - 3/10/13
