Ingredients



    * 2 sweet potatoes, scrubbed
    * 6 (10 inch) tomato flavored tortillas
    * 1 cups shredded cheddar cheese
    * 1 (15 ounce) can black beans, rinsed and drained,or vegetarian re-fried beans.
    * 1 cup salsa (optional)




Directions

Directions

1. Preheat oven to 450 degrees F (230 degrees C). Cut several slashes into each sweet potato.
2. Bake the potatoes in the preheated oven until tender, about 45 minutes. Mash the hot sweet potatoes in a bowl. Reduce oven heat to 200 degrees F (95 degrees C).
3.place all ingredients evenly on 4 tortillas top with another tortilla bake till cheese is melted.
4. Serve in wedges topped with salsa and sour cream (not counted in the calories/fat/etc)
