Ingredients

    Vegetable Broth, 6 cups
    Carrots, raw, 2 medium - chopped
    Onions, raw, 2 large - chopped
    Celery, raw, 1 cup, diced
    Garlic, 2 clove - minced
    Zucchini, 1 small - cubed
    Kale, 1 cup, chopped
    Barley, pearled, raw, .5 cup
    *Chickpeas, 14.5 oz
    Parsley, fresh - 1 tbsp
    Thyme, ground, .5 tsp
    Oregano, ground, 1 tsp
    *Contadina Crushed toms w/ Italian Herbs, 28 oz
    Salt, 1 tsp
    Pepper, black, .25 tsp

Tips

I cooked it at least 8 hours, and still was AWESOME!!


Directions

1)Combine all ingredients except cheese in slow cooker
2)Cover
3)Cook on low 6-8 hours or until vegetables are tender
4)Serve topped with a sprinkling of Parmesan cheese
