Introduction

My version of the huevos rancheros they serve at work. My version of the huevos rancheros they serve at work.

Ingredients

    One Tortilla
    One Fried Egg
    1/2 cup fat free refried beans
    1/2 cup enchalada sauce

Tips

This is very high in fiber and protein. Sodium content high too, so be careful!


Directions

Make many of these on a baking pan or just make one on a small oven safe dish/pan. Place the torilla on the pan, scoop half a cup of beans on the tortilla, place a fried egg on top of the beans. Pour the sauce over the egg. Bake at 400 until beans are warm.
