Ingredients

    6 cups low sodium chicken broth
    2 lbs boneless skinless chicken breast
    1 lb carrots - chopped
    1 lb celery - chopped
    1 medium onion - chopped
    3 cloves garlic - chopped (more or less to taste)
    1 10 oz pkg spinach - fresh or frozen
    1 Tbsp adobo seasoning
    1 tsp Italian Seasoning
    red pepper flake optional



Tips

I use a potato masher to shred the chicken in the crock pot. Once it cooked it will start to shred under the pressure from the masher.


Directions

Place everything except the spinach in a crock pot (mine is 6 qts) and cook 4 hours on high or 6 - 8 hours on low until chicken is cooked. Pull chick out and cube or shred. Add spinach and stir. Add back the chicken. Salt and pepper to taste. Stir and eat
