Ingredients

    1 1/2 c. whole wheat flour
    1 1/2 c. rolled oats
    4 tsp. baking powder
    1 tsp. salt
    1 tsp. baking soda
    1 c. plain yogurt
    3/4 c. Agave
    2 ripe small bananas
    1/2 c. PB2
    3 Tbsp Chia
    3/4 c. water
    1 tsp. vanilla extract

Tips

Optional: Sprinkle tops with Truvia & cinnamon.


Directions

To make Chia gel: Place Chia seeds in water and set aside.
In a large bowl, combine flour, oats, baking powder, salt, PB2, and baking soda. In another bowl, beat together yogurt, smashed bananas, Agave, Chia gel, and vanilla until smooth. Add mixture to the dry ingredients and stir just until moistened and blended. Do not overmix.
Spoon batter into prepared muffin tin, filling cups 3/4 full. Bake in preheated oven at 350° for 25-30 minutes, or until done.
