Ingredients

    Trader Joe's High Fiber Penne, 16 oz
    Frozen Shrimp, Medium, 12 oz
    Trader Joe's California Sun-Dried Tomatoes, 1 package
    Asparagus, fresh, 1 lb.
    Canola Oil, .5 cup
    Kirkland Signature Pure Sea Salt Fine Grain, 1 tsp
    Peas, frozen, 2 cups

Directions

Fill a large pot with salted water, and bring it to a rolling boil. Blanch asparagus by boiling for 2 to 3 minutes, then dropping into cold water with ice. Remove asparagus and chop into bite-size pieces, and defrost frozen shrimp in cool water used to cool asparagus. Bring salted water back to a boil. Toss in pasta and oil, and boil according to package directions. Turn off pasta when cooked to al dente, and toss in frozen peas. Wait 1 to 2 minutes then drain. Combine all ingredients. Additional seasonings to taste.

Serving Size: Makes 8 2-cup servings.
