Introduction

These brownies are really chewy, they aren't super sweet but they do give that chocolate fix. They don't crisp up on the top like a traditional brownie but they are vegan! Ingredients

    Dry Ingredients:
    1/2 c coco powder
    2 c of flour
    1 c of granulated sugar
    1/2 tspn salt
    1/4 tspn baking soda

    Wet Ingredients:
    1 tspn vanilla
    2 cans of pumpkin puree
    1/2 c of honey

Tips

I made this up yesterday after reading about zucchini brownies. Zucchini is way out of season here so I used pumpkin. Pumpkin leaves stuff really chewy. You could probably get a slightly better consistency by diving the pumpkin and using 1/2 apple sauce or adding 1/2 a cup of oil. I try to avoid oil and I didn't have any applesauce. Play with it. Enjoy!


Directions

Mix all dry ingredients in a bowl, set aside. Mix wet ingredients in a different small bowl. Add wet ingredients to dry and mix until there are no more dry patches. Pour into a 13x10 pan (you can use a smaller pan for thicker brownies but you will need to adjust bake times). Bake for 25-30 minutes or until toothpick in the center comes out clean.
