Introduction

Ingredients

    4 cups mixed greens
    8 small tomatoes, quartered (I like campari tomatoes)
    4 mini cucumbers, sliced (or 1 cup large cucumber)
    1 cup sliced sweet bell peppers (I like to use all the colors to make the salad more appealing - red, yellow and green)
    3-5 sprigs dill weed, chopped
    3-5 sprigs parsley, chopped
    3-5 sprigs cilantro, chopped
    1/2 tsp salt (or to taste)
    1/2 tsp black pepper (or to taste)
    1/2 tsp paprika (or to taste)
    2 tbsp extra virgin olive oil
    2 tbsp balsamic vinegar
    ---
    1/2 sliced red onion (optional) - not in nutritional values
    other spices to taste (optional) - not in nutritional values

Tips

You may add nuts (walnuts, almonds, pecans or pine nuts work well), cheese (either goat cheese or asiago goes really well) and/or protein (grilled chicken, grilled fish or shrimp) to make it a more filling and savory meal.


Directions

Wash and clean the vegetables and herbs. Quarter the tomatoes, slice the peppers into strips, slice the cucumbers, chop the herbs and put everything in a bowl. Sprinkle with salt, pepper, paprika and other spices to taste, add the olive oil and vinegar and mix well.

Serving Size: Makes 4 side servings or 2 full meal servings
