Introduction

I didn't have the ingredients to make Chef Meg's cheese sticks, so made them this way, instead. I also made a serving equal 4 pieces instead of 2 because, let's face it: who's going to eat only 2 cheese sticks? :P I didn't have the ingredients to make Chef Meg's cheese sticks, so made them this way, instead. Ingredients

    1 large egg white
    1/2 cup Progresso Italian & Herb Bread Crumbs
    4 Frigo Mozzarella String Cheese Sticks*


    *You can substitute "light" cheese sticks to reduce the calories & fat.

Tips

I like to serve these with a side of sliced apple, to create a satisfying light lunch.


Directions

Slice each cheese stick in half. Put bread crumbs into a zippered bag or container with lid. Dip pieces of cheese into egg white and coat thoroughly, allowing excess to drip off, then place up to 4 pieces at a time into bread crumbs and shake to coat. With dry hand, remove pieces to a plate; repeat with remaining 4 pieces. Re-dip each piece, one-by-one, into the egg and then into the bread crumbs to double-coat. Place on plate and refrigerate for at least 30 minutes. Meanwhile, preheat oven to 375 degrees. Place refrigerated cheese sticks on baking sheet spritzed with olive oil cooking spray. Bake in preheated oven for approximately 8 minutes, or until cheese begins to "ooze".

Serving Size: Makes 2 servings of 4 pieces each
