A yummy casserole fit for a king! A yummy casserole fit for a king!
Number of Servings: 6

Ingredients

    1 green bell pepper, chopped
    1/2 medium onion, chopped
    1 can low fat, low sodium condensed cream of mushroom or chicken soup
    1 (10 oz) can tomatoes with chilies
    8 oz cubed chicken, cooked
    4 corn or flour tortillas, torn in pieces
    6 tbsp or 1/3 cup shredded reduced fat cheese

Directions

Cook meat in a dutch oven until brown.
Add onions and green peppers, to grill slightly.
Then add soup and tomatoes.
Layer tortillas and soup mixture in a small casserole dish. Sprinkle cheese over the top of the casserole and bake uncovered at 325*F for 40 minutes or until bubbly.

    I too was skeptical while I was making it, but was pleasantly surprised. This was a tasty recipe. I added tortilla chips instead of tortillas. I don't think the chips added anything and will leave them out next time. I also added a can of Mexicorn and used a rotisserie chicken. - 5/29/11

    A little more watery than I was expecting. Next time I will use tortilla chips or harden the corn tortillas before I put them into the recipe. I used flour this time around and they were a soggy mess when I pulled the dish out of the oven. Still yummy and makes great leftovers. - 1/25/11

    This was one of the first recipes I tried on SP and it was GREAT! It's got me using a lot more of the recipes on here. I was craving for it all week but it sounded more like a Sunday dinner so I made it on Sunday and left it to bakw while I got some chores done after church. I was very impressed! - 5/2/08

    A Family Fav!! Named for the south Texas famous "King Ranch!" I have made it several times w/ lots of variations, my mom always used tortilla chips (stale ones work the best). We use Rotel tomatoes (drained), & we like red bell pepper. We serve it over rice, often w/ guacamole. - 11/14/11

    First of all, this is named for the legendary King (not King's) Ranch, based here in Texas, one of the largest, if not the largest ranch in the world. That being said, this is a fabulous recipe, one of my long-time favorites. - 4/10/10

    SO good! I was pleasantly surprised, as I was making it I very skeptical. But my husband & I both loved it! Not sure why it's called King Ranch Chicken... pretty confused about that. Maybe like the brand King Ranch? Who knows! - 2/18/10

    In re to the King's Ranch Chicken Casserole, especially for RNC, LOVE, AMBER and BETH. This is not the original recipe -- have no idea where this one came from. I have had the original one since around 1970. This name is not even right. As some of you said -- King Ranch is the correct name. - 9/15/14

    This was excellent. We had fresh canned tomatoes (made by my FiL) and a jar of sliced jalapenos so I used a mixture of that instead of the canned, but it worked out well (albeit very spicy, my fault :)). This works REALLY well with rice. - 12/5/07

    We loved this dish. Tossed chicken with cumin, garlic powder and chili powder before cooking. Used diced tomatoes and a can of chopped green chilis. A little FF sour cream on top. Delicious. Also great leftovers for lunch. - 11/18/07

    I've made a version of this for years where I add more chili powder, garlic, cumin, and some jalapeno. It can also be made simply adding a can of Old El Paso Green Chili Enchilada Sauce. There are a number of versions floating around...it's a good and filling recipe. - 11/16/07

    I added garlic and used red bell pepper. This is a good recipe for using up extra or cracking tortillas. I topped it with FF sour cream and sprinkled with chopped green onion. My family likes this a lot. - 11/8/07
