Introduction

I was looking for a baked treat that I could make easily
with ingredients on hand that would be good quality
and high in protein. I welcome suggestions for improvement as this was my 1st attempt.

Ingredients

    1/2 cup Krusteaz Wheat & Honey Pancake Mix
    1/2 cup Gold Medal All Purpose Flour
    2 Tbsp Hodgson Mill Milled Flax Seed
    1 scoop Protein Powder, Body Fortress Advanced Whey
    1/4 tsp Baking Powder
    1/3 cup Dried Cranberries
    1/4 cup Chopped Walnuts
    2 tsp Ground Cinnamon

    1 Egg, large
    1/2 cup Applesauce, unsweetened
    1/4 cup water

Tips

Spray mini muffin tin with cooking spray
or use paper liners.


Directions

Mix dry ingredients together then
add wet ingredients and mix until combined well.
Put into min-muffin pan and bake at 350 degrees
for 20 minutes.
Enjoy!
