Very easy and very delicious! Very easy and very delicious!

    2 (6oz) cans boneless chunk style salmon, drained
    1/2 cup shredded mozzarella cheese
    1/2 cup shredded low-fat cheddar cheese
    1 medium onion, chopped and sauteed with cooking spray
    2 tbsp flour
    4 eggs
    1 cup skim milk
    few dashes red pepper sauce


Toss together salmon, cheeses, onion and flour.
Put in a sprayed 9-inch pie plate.
Beat eggs slightly; add milk and pepper sauce.
Pour over salmon mixture.
Bake uncovered in a 350 degree oven 35-40 minutes, or until a knife inserted in the center comes out clean.
Let stand 10 minutes before serving.

    I'm trying to make a least one new recipe a week. Yesterday I made this and OMG, it's soooo good. I'd never made quiche before and would have never have believed it would have been so easy and so delicious. - 4/26/07

    This was a good and easy supper dish. I did add chopped spinach to up the Vitamin C and Potassium content. Buying a high quality salmon is crucial to have the texture turn out well. I'm going to try it with Jack Mackeral next week. - 2/17/09

    Yum! We loved this, although I did put it in a crust, which didn't add too many calories. Thanks!

    It was delicious. I added a little red pepper, parsley & cumin for color, flavor & extra nutrients. Great recipe & easy to make. - 2/12/08

    I did not like this. I thought it was very runny and had too much of a fish flavor and not enough other flavor. We added nutmeg, red pepper flakes, and pepper. It was stil did not turn out well. I think it would be better with a milder fish or some shirmp and crab. - 1/28/08
