This is a favorite Saturday evening meal for my husband and I. I usually serve it with a side salad and perhaps a glass of Port afterward, as we watch British Comedy. Ingredients


    Ingredients:
    Goat Cheese, Soft, 11 oz crumbled
    Leeks, .5 leek
    Onions, raw, .5 cup, chopped
    Morningstar crumbles, .5 cup
    Grape Tomato 6 chopped
    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    Fat free half and half, .5 cup
    Milk, nonfat, .5 cup
    Egg substitute, liquid (Egg Beaters), .5 cup
    Mushrooms, fresh, .33 cup, pieces or slices
    Garlic, 1 clove

Directions

Preheat oven to 350 degrees. Spray a 9 inch tart pan with cooking spray, and mold room temperature pie crust to pan. Sautee chopped vegetables in cooking spray until carmelized. While this is cooking, whisk Egg Beaters, Fat Free Half & Half, Skim milk, salt and pepper to taste. I like to add some Herbs de Provance. Spread vegetables on the bottom of the tart, and then crumble half of the goat cheese over it. Pour the egg mixture over the vegetables and chees, and top with the remainder of the crumbled goat cheese. Top with fresh chopped parsley, basil, or cilantro, and bake for 30-40 minutes until the top puffs up and is light golden brown. Let the tart sit for about 10-15 minutes before serving.
