Ingredients
-
Trader Joe's Organic Brown Rice Penne Pasta - 1/2 cup
Trader Giotto's Arrabiata Sauce - 1/2 cup
Trader Joe's Wild Blue Shrimp (from freezer section) - 4 Shrimp
Trader Joe's Fire Roasted Bell Peppers & Onions - 3/4 cup
Tips
You can use any pasta you like. I use brown rice since I can't have any wheat or corn right now.
Directions
Cook Pasta according to directions. Reserve some of the cooking water and drain.
While pasta is cooking put Arrabiata sauce into a small skillet and place frozen Shrimp in Sauce. Cover and simmer over a medium low heat.
After a few minutes when Shrimp starts to turn pink turn the Shrimp over. Add the Peppers and Onions and re-cover.
Stir occasionally. Allow to simmer over medium low until Shrimp is cooked and Peppers and Onions are heated through. (you may wish to add some of the pasta water to loosen up the sauce as needed).
Once Shrimp and Veggies are done, add Pasta to Sauce and mix.
Remove Shrimp and pour the rest of the mixture onto a plate or into a bowl. Place shrimp on top of pasta and enjoy.
