    Pineapple Juice, 6 fl oz
    Olive Oil, .25 cup
    Cider Vinegar, .25 cup
    Onions, raw, 1 medium (2-1/2" dia)
    *Peppers, sweet, red, fresh, .5 large (2-1/4 per lb, approx 3-3/4"
    Ginger Root, 0.125 cup slices (1" dia)
    Brown Sugar, .25 cup, packed
    Raisins, .125 cup, packed
    *Pepper, ancho, dried, .25 pepper
    salt & pepper to taste

Saute vegetables until translucent. Add mango. Add juices/liquids. Add seasoning. Simmer for 30 minutes
