Ingredients

    2 tbsp olive oil
    1 large onion, chopped
    2 medium carrots, sliced
    1 garlic minced
    2 cups chopped mushrooms
    1/2 tsp celery seed
    1tsp dried thyme
    1/2 tsp dried rosemary
    1/4 tsp black pepper
    12 cups water
    1 tbsp Better Than Bouillion Vegetable Base
    2/3 cup orzo

Tips

Mini bow-tie noodles, rice or barley can be substituted for orzo. Add salt to taste.


Directions

Saute onion, carrot and garlic in oil. Add mushrooms and saute 2-3 minutes. Add 4 cups of water and bring to a boil. Add 8 cups of water, seasoning, beans and vegetable boullion. Bring to a boil, reduce heat and simmer on low 30 minutes. Add orzo into the pot and gently stir. Partially cover the pot and cook 10 more minutes or until orzo is soft.
