Ingredients

    Water-- 1 cup
    Chicken Broth, Low Sodium-- 5 cups
    Onion-- 1 small, diced
    Peas, frozen-- 1 cup
    Boneless, Skinless Chicken-- 1 pound
    Yellow Rice-- 8 ounces

Directions

1. Place the broth in a pot and bring it to a boil.
2. While the liquid is heating up, dice up one small onion and place it in the pot.
3. Once the liquid is boiling, add the chicken. Allow the chicken to cook for 20 minutes.
4. Once the chicken is cooked, take it out of the pot and shred the meat. Save the liquid to use to cook the rice.
5. Cook the rice.
6. Once the rice has come to a boil and has been brought to a simmer, add the meat.
7. Peas are an optional addition. They give a nice pop of flavor. Add in frozen peas 5-7 minutes before the rice cooking time is finished.
