Ingredients

    1-2 Tsp Olive Oil
    1 clove garlic, or equivalent
    1 small onion, chopped
    1 cup sliced portabello mushrooms, or whatever you like
    2 cups fresh baby spinach
    1 cup dry steel cut oats, cooked per pkg directions
    1 tbsp chia seeds per serving
    hot sauce to taste, to rev metabolism- optional



Tips

I saw a similar recipe on Dr. Oz. It reminded me of this one. I eat this for breakfast as is, or add chicken and have it for lunch. I add a little spice to taste, either masala or curry, you can add anything you like. For the hot sauce, I use Frost Bite since it's just heat, and no flavor. I top with a sprinkle of parmesean cheese.


Directions

Cook steel cut oats per package directions.
Sautee onions, mushrooms and garlic in olive oil. Add spinach, and just til wilted.
Stir into oats, and top with chia seeds and hot sauce, if desired. Makes 4 servings.


Serving Size: Makes 4 hearty servings and is perfect for breakfast!
