Ingredients

2 cups Oat Bran
1/2 cup Apple Fiber
1/2 tsp baking soda
1/4 cup Apple Sauce
1 1/2 cups skim milk
1/2 cup raisins
2 Egg Whites
1/3 cups of brown sugar
2 tbsp Cinnamon
Directions
Spray 12 muffin cups with Pam or Baker's Joy or use Paper cups. Preheat oven to 400 degrees. In a large mixing bowl, combine oat bran, apple fiber and baking soda.
In another mixing bowl, combine oil, milk and raisins; set aside.
Beat egg whites until stiff, gradually beating in the sugar.
Stir the liquid ingredients into the dry ones, and immediately there after fold the egg whites into the batter. You should not stir the liquid ingredients into the dry ones before you are ready to fold in the egg whites because the batter will become stiff and it will be hard to work in the egg whites.
Scoop the batter into the prepared muffin cups and bake for 18 minutes or until a toothpick inserted in the center of a muffin comes out clean.
