Introduction

Ingredients

    10 slices bacon cut into 1/4" strips
    2 tbs olive oil
    1 onion, finely chopped
    1 carrot finely diced
    2 celery stalks finely diced
    4 cloves garlic, minced
    1 bay leaf
    2 tsp chopped thyme
    2tsp chopped rosemary
    1 pound great northern beans, soaked overnight & drained
    10 cups chicken stock
    salt & pepper to taste

Directions

In a large pot cook bacon over medium heat until brown & crisp. Drain, reserving the fat & bacon separately. Heat the oil in the soup pot. Add onion, carrot, celery and cook until softened. Stir in the garlic, bay leaf, and 1 tsp of each thyme & rosemary. Add drained beans, stock and 1 tbs bacon fat and bring to boil. Simmer the soup until beans are tender, about 1 1/2 hours. Discard the bay leaf and stir in the remaining herbs. Season to taste with salt & pepper, garnish with the bacon and serve.
