Introduction

I used some leftover rice and spinach to make a nice soup I used some leftover rice and spinach to make a nice soup
Number of Servings: 18

Ingredients

    3 -4 cups cooked Spinach
    6 cups cooked brown rice
    12 cups chicken broth (I use chicken base and water so I can control the saltiness)
    1 cup onions sliced and slightly browned
    about 1/4 cup chopped garlic

    **optional you can add cut up cooked chicken or beans to this for protein

Directions

When I made this I was using leftover spinach and rice I cooked the night before. Being a rainy day I figured why not! You can add cut up chicken to it or beans for protein. It was delicious!

Slice and saute the onions and garlic in olive oil. Add your chicken broth and rice to this mixture. Let this simmer until the rice picks up some flavor (15 minutes for mine). Add your spinach to the pot and cook until it is heated through. You can use vegetable broth to make this a vegetarian soup.

You can top this with a little shaved parm cheese if you like.

    I would make this again because it definitely helps use up leftovers nicely. I added chicken. It made a nice light supper so I didn't feel guilty about indulging in a small dessert. Thanks for the good idea! - 7/9/08
