Ingredients

    2 eggs
    6 egg whites
    2 TBS water
10 oz package frozen Spinach (chopped)
1/2 cup red and green peppers (I use the mini sweet peppers), minced
    1/2 cup onions, minced
    3 cloves garlic, crushed
    2 tsp dried Rosemary
1/2 cup fresh Parmesan Cheese, grated

Directions

Cook spinach in microwave and drain. Spray large pan with olive oil; saute onions and peppers until translucent. Add cooked, drained spinach. Continue to heat through. Crush garlic cloves and add to mixture, continue to cook until garlic become aromatic. Scramble eggs and egg whites together with Rosemary and garlic powder. Pour egg mixture over mixture in pan. Cook over medium until starting to set. Place pan under broiler and cook until "set". Sprinkle parmesan on top and return to broiler, just until melted.
