Ingredients

Cooking spray to coat muffin or mini loaf tin
2 oz hot ham capricola or any sliced ham
3 T egg beaters
1/4 c baby spinach leaves
1/2 small tomato chopped
1 T chopped onion
1/8 or so ts steak seasoning (to taste & or you could use Mrs dash salt free seasoning
1/8 cup ff shredded cheddar cheese
Tips
I like a lot of flavor especially while dieting. My 2 year old Granddaughter Maddie inspires me in this area. If she doesn't like something I'm eating she will tell me, "don't eat it Mimi, it's not yummy!" I have come to agree with her, it's got to be yummy for me to eat it!
In this recipe I like to use spicy capricola ham, it makes it yummy!
I like to keep some tupperware containers filled up with chopped up vegetables, such as one for chopped onion, tomatoes, ect.. It makes for quicker preparation to have everything on hand.
Directions
preheat oven to 375
Spray 1 mini loaf muffin tin with cooking spray. You can use a large muffin tin if you don't have the mini muffin tin.
line the mini muffin tin with the sliced ham. I like spicy ham but use what you like or have on hand.
place baby spinach leaves on top of the ham.
In a small bowl combine the egg beaters, tomato, onion and seasoning. Stir to combine and pour over the spinach leaves in the muffin tin pushing the spinach down to make room for the egg mixture. Sprinkle with the ff shredded cheese. Bake for 10-15 untl set, the bigger the spinach leaves the longer it takes to set. I usually put a small piece of foil over during the last 5 minutes of baking to help it set and to keep the ham from browning too much.
Remove from oven and serve.

It was great. Used kale instead of spinach because that is what I had on hand. Just chopped the kale up and added it to egg mixture. Also used 3 eggs instead and 3 oz ham then divided by me 1/3 and husband 2/3. He asked me to make it again tomorrow. - 2/11/18
