I make this with salmon I catch here at home in the summer. Brings back good memories of the Kenai River and warmer temperatures. Very filling and flavorful. Quick and easy dinner. Ingredients

    Wild Alaska Red Salmon
    Frozen Peas
    Sliced Mushrooms
    2% Cheese
    2% Milk
    98% fat free mushroom soup
    Egg Noodles
    Olive oil
    Celery
    Onion

Tips

Add the cheese just before the noodles. The heat from the warm noodles will melt the cheese into the mixture. Sprinkle the top of the casserole with cheese or bread crumbs if you don't mind the calories. Salt and pepper to taste after serving.


Directions

Boil noodles and drain.
Saute onions and celery in a non-stick skillet.
In a large bowl, stir together soup and milk.
Add mushrooms,cheese, sauteed onion and celery.
Drain salmon and crumble into soup mixture.
Fold noodles into previous ingredients and bake at 350 for 20 to 25 minutes.

Serving Size: makes about 13-1 cup servings
