Introduction

Ingredients

    10 ounces Chicken Breast (boneless Skinless) or 4-5 tenderloins cubed
    2 medium carrots
    3/4 cup sliced zucchini
    3 cloves garlic chopped
    2 Large mushrroms sliced
    2 cup spinach chopped
    1/4 cup chopped onion
    2 stalks celery chopped
    2 tsp Itallian Seasoning
    1/2 tsp salt
    1/4 tsp pepper
    3 tsp chicken base
    3-4 cups water

Directions

Makes 5 servings

Add all ingredients in crock pot except zucchini, mushrooms and spinach. cook in crock pot on high for 3- four hours. add spinach mushrooms and zucchini about 30 minutes before serving. For stove top cook until chicken and veggies are cooked then add spinach mushrooms and zucchini 15 minutes before serving.

    Very healthy and very tasty! I made it on the stovetop instead of crock pot, because I was in a hurry. I love the veggies, the low-carb count, and the seasonings are very good. Will make this again. - 11/12/13
