Ingredients

12 large eggs
6 cups chopped broccoli
2 T chopped onion
8 oz feta cheese or fat free ricotta
(I currently changed the ingredients to FF ricotta to reflect lower calories)
Olive oil pan spray
1/4 to 1/2 cup water
Tips
You can definitely use less feta or low fat/fat free feta to lower calories. Any other cheese or vegetables could be used!
Directions
Chop broccoli and onion and saute on low in large skillet sprayed with olive oil pan spray until tender. Beat 12 eggs with 1/4 to 1/2 cup water. Mix in broccoli and onion. Pour into casserole dish (I used 9x13) that has been sprayed with olive oil pan spray. Dice feta cheese and sprinkle evenly over the top of the casserole. Cover and bake at 350 for 40 min. Cut into 12 sections.
