Ingredients

    Turkey Tenderloins and Apricot Sauce

    20 oz. package (1¼ pound) turkey tenderloins, 99% extra lean
    1/4 tsp each salt and fresh ground black pepper
    Apricot Sauce
    2/3 cup apricot preserves, reduced sugar
    2 fresh cloves garlic, minced
    2 Tbsp dijon mustard
    2 Tbsp soy sauce, reduced sodium


Directions

Line a baking sheet pan with foil and coat with cooking spray. Season turkey tenderloins with salt and pepper; place on prepared pan. In a small bowl, combine sauce ingredients; mixing well and spoon over turkey. Roast at 400°F for 35-40 minutes, basting frequently with the sauce, until an instant-read thermometer inserted into the thickest part registers at least 160. Let turkey rest for 10 minutes
