Ingredients

1 tbsp canola oil
1 medium onion - finely diced
2 medium tomatoes - finely chopped
1 large handful chopped coriander
100g each of grad, moong and chana dal (yellow lentils)
3 cloves garlic
1 heaping tsp cumin seeds
1/2 tsp black mustard seeds
1/4 tsp tumeric
1/2 tsp Garam Masala
2 tsp salt
1/2 tsp cumin powder
1/2 tsp coriander powder
1 small red chili - finely chopped
Directions
Rinse lentils well in running water than soak for 30 minutes, then simmer in 1L water with 2 tsp salt.
Heat oil and add cumin seeds and mustard seeds and stir till popping. Add onion, chili and garlic and cook until onions are translucent - about 5 minutes. Add other spices (except for cumin and coriander powder) and cook for 2-3 more minutes, then add tomato and cook for another few minutes. Take off heat until your lentils are almost cooked, then add them to the mix along with the last two powder spices. Let cook for about another five minutes for flavors to blend then stir in coriander.
Serving Size: Makes about 6 servings of 1 cup each
