Ingredients

    4 cups rolled Oats
    1/2 cup Olive Oil
    1/2 cup hulled Sunflower Seeds, without salt
    2 tsp Vanilla Extract
    2 tsp Cinnamon, ground
    1.2 tsp Nutmeg, ground
    1/2 cup Raisins
    3/4 cup shelled Walnuts

Tips

Try different nuts, spices and dried fruit for endless varieties. I make a batch to take with me whenever I travel, so I never have to worry about a quick and healthy breakfast or snack.


Directions

Preheat oven to 350 degrees. In large mixing bowl, combine all of the dry ingredients EXCEPT the dried fruit. Combine the olive oil and vanilla extract. Drizzle a few teaspoons of the oil mixture over the oat mixture and stir. Repeat until all of the oil is gone. Then sprinkle cinnamon all over the mixture and repeat at least once, depending on how much you like cinnamon. Do the same with a dash of nutmeg. Now pour the mixture into a large baking pan with raised sides and spread evenly.
Toast the granola for 15-20 minutes, stirring every 5 minutes. Don’t overcook it. After removing from oven, allow the granola to completely cool before adding raisins (or other dried fruit). Store in an airtight container in the refrigerator or freezer.
