Ingredients

    2.5 lb pork loin roast
    16 oz pkg fresh white tiny potatos with skins on
    16 oz pkg baby carrots
    2c green beans
    1T dried basil
    2T dried rosemary
    2 cloves garlic
    1/4 t pepper
    1/2t salt

Tips

can make rub and marinate up to 24 hours. let roast get to room temp before roasting.


Directions

make a paste with herbs, salt, pepper, garlic and olive oil. rub on roast,
roast 375 degree oven 1 hour to 1.5 hours thermometer reads 155 degrees
