Ingredients

    3 T fresh lime juice
    1 T Vegetable oil
    2 T Soy Sauce
    3 t grated fresh ginger
    1 clove garlic
    1 pound medium fresh shrimp, peeled deveined and chopped
    2 green onions diced
    1 (5-oz) can water chestnuts, drained and chopped
    1 head iceberg lettuce

Directions

In a medium bowl, combine lime juice, 1 T oil, 1T soy sauce, ginger and garlic. Add shrimp and marinate in the refrigerator for 30 minutes. In a medium non-stick skillet, Sprayed with non-stick spray heat to medium high, Add green onions and water chestnuts; cook stirring occarsionally, for 3 minutes. Add shrimp and marinade and cook 3 minutes, or until shrimp are pink, Stir in 1 T soy sauce.
DIvide lettuce into leaves. Spoon about 1/4 cup mixture down the center of 1 lettuce leaf. Fold bottom edge and sides up and over filling. Serve.

    Very tasty... the trouble was stopping at 1 serving! Ours came out very runny... so perhaps not as many calories since we didn't eat all the sauce. - 10/28/08
