    Basic White Bread (small)

    5 C warm water
    C honey
    C olive oil
    1 tsp salt
    1 T yeast
    10 C flour ( approximately)


Use honey in place of sugar
Use olive oil in place of shortening


Activate yeast in 1 C of the water (warm), and dash of the sugar, let rise in a bowl. Add to remaining water, sugar, oil and salt. Slowly add flour until feels good. Knead, let rise until double (about 3 hours). Punch down and let rise again if time allows. Grease pans, shape dough, place in pans. Let rise until nicely rounded. Bake at 350F for 30 minutes on bottom rack of oven. Bang loaves out of pans immediately. Makes about 5 loaves.
