Introduction

Well, I wanted to make mini banana nut muffins and the more I thought about it I wanted oats and flax meal. So, here is what I came up with. These are not super sweet, if you like your bake good sweeter you may want to add about 1/4 more brown sugar. Ingredients

    1/2 cup butter, unsalted (I let mine sit out for 30 mins)
    1/2 cup brown sugar
    1 egg
    1 4 oz strawberry dannon danimals
    1/2 flax meal
    3/4 cup oats
    1 1/2 cup all purpose flour
    2 1/4 tsp baking soda
    1/2 tsp salt
    3 mashed bananas (ripe is best)
    1/2 cup chopped pecans
    1/2 cup chopped walnuts


Directions

Preheat oven to 350 degrees. Cream the butter and brown sugar together. Add the egg and yogurt and beat in. Add the bananas. Add the flour, flax meal, oats, baking soda and salt. Beat until well mixed. Fold in nuts. Spoon batter into prepared mini muffin cups. Bake approx 15 mins.
