Old Fashioned Oatmeal- 1-1/2 cup dry
Coconut, shredded and unsweetened, 1 cup
Salt, .5 tsp
Cinnamon, ground, 1.5 tsp
Rice flour .25 cup
Pecans, .5 cup, chopped
Raisins, .5 cup
Apricots, dried, .5 cup, chopped
Canola Oil, .25 cup
Vanilla Extract, 2 tsp
Egg, fresh, 1 large
Banana, very ripe, 2
(other nuts and dried fruits may be substituted)
Directions
preheat oven to 350 degrees. Grease cookie pans well.
In large bowl, combine oats, rice flour, chopped nuts and coconut. stir in cinnamon and salt. Add chopped dry fruit and mix. Make sure the dried fruit does not stick together in large clumps. Put bananas, oil, egg and vanilla in a blender an puree. Pour wet ingredients over dry and stir to combine well. put about 2 tbsp of mixture on cookie sheet and flatten to make about a 2 inch cookie. Bake for 20 minutes until edges are golden brown.
