Ingredients

INGREDIENTS:
2 (16 ounce) cans black beans, drained and rinsed. (I will sometimes use 1 can pinto beans and 1 can of black beans)
1 green bell pepper, cut into 2 inch pieces (I use 1/2 red and 1/2 green bell pepper for a little diversity)
1 onion, cut into wedges
3 teaspoons diced garlic
2 eggs
2 tablespoons chili powder
2 tablespoons ground cumin
2 teaspoons Thai chili sauce (I like the one with garlic)
1 cup bread crumbs (I like the Italian style)
Freshly chopped cilantro, to taste (I like a lot)
Directions
INSTRUCTIONS
In your food processor, put bell pepper, onion, and garlic and chop.
In a large mixing bowl, mash the black beans as much as possible.
In a small bowl mix the eggs, chili powder, cumin, chili sauce, and cilantro.
Mix all together with bread crumbs and stir until thoroughly mixed. (should seem a little dry)
This recipe should make about 8 patties. Mold into patties and cook until browned on each side over med-med hi heat. I typically use olive oil spray to always keep my pan lightly coated, but you could use whatever your used to. Also if you want to grill the patties, place them on aluminum foil them for about 8 minutes on each side. you can also bake them at around 375-400 for 8-10 minutes per side.
