Number of Servings: 1

Ingredients

    1 TBS coconut flour
    2 TSP cinnamon
    1 TSP baking powder
1 large or extra large egg
2 TBS full fat coconut milk
    1 TSP melted coconut oil

    Microwave-safe mug (8-12 oz capacity)

Tips

1. The 1 TBS of coconut flour is not a typo - it really does take just 1 TBS. Because coconut flour is like a sponge and soaks up liquid, If your mixture seems too thick and you add more liquid, it may actually get thicker, not thinner. So be sure to measure carefully so that your coconut flour and liquid ratios are accurate.
2. This muffin does not taste like coconut. It has a strong cinnamon fragrance, like a cinnamon bun or coffee cake.

Directions

Mix dry ingredients and put aside.
Mix wet ingredients.
Add dry ingredients to wet ingredients and stir until most of the lumps are gone.
Transfer to 8-12 oz microwave-safe mug.
Cook on high power for 50-60 seconds.
The smaller the mug, the higher the muffin will puff.
Allow to cool for a minute, then remove from mug and eat plain, or with your spread/topping of choice.

    Incredible!

The only drawback for me was I felt the cinnamon muffin needed a bit of sweetener. Otherwise, delicious and satisfying. I altered the recipe myself by using cocoa instead of cinnamon, & adding Truvia (1.5 packets), & cooked 8 seconds longer (your microwave may vary!)---fantastic! - 7/6/14

    O.K.
Unfortunately, this was very eggy and bland. I even used a medium egg, not the large that the recipe calls for. On the plus side, it did cook up properly and smelled really good. Next time, I’ll try adding sweetener. - 7/12/18

    Incredible!
This is a staple breakfast for my teenage boys. I make 2 for each boy using ramekins. They can do it themselves also, so it is a great way to start the day! - 2/27/17
