Ingredients

    1 large egg
    2 egg whites (You can also use two servings of egg white substatute or leave out the egg and use only egg substatute)
    1 slice of american or other cheese
    dash of salt
    Non-stick cooking spray

Tips

You can use two servings of egg white substitute instead of egg white or leave out the egg al together and use only egg substitute. Cut back on fat and calories by using fat free cheese.
I just leave out the cheese and add a little dill with the salt. Cut it in four triangles instead of folding in half and I have a quick easy to handle breakfast for my early morning commute. I have found that this is a good way to have eggs on the go, and it is a nice change from boiled eggs.
This is great for someone watching their carbohydrate intake.


Directions

-Put egg and egg whites in a round bottom bowel
-add your salt
-Wisk together with a Wisk or fork until frothy
-spray a small skillet with non-stick spray and place over medium heat
-when the eggs are almost cooked all the way through using a spatula gently turn the egg over, try to keep it from tearing
-place your cheese to one side, I usually tear the cheese in half so that the whole area is covered with cheese then fold it in half, making a crescent shape.
-flip once and leave in only long enough for the cheese to melt.
-place on a plate and serve.
