I never ate cottage pie until my husband suggested it for dinner a couple years ago. It's actually great for cleaning out the frig, and is a balanced, one pot meal. Ingredients

    1 pkg. Ground Turkey
    1 Green Pepper, cut in strips
    1 Red Pepper, cut in strips
    1 Yellow Pepper, cut in strips
    2 medium onions, cut in thin strips
    Hunts Petite Diced Tomato, 14.5 oz can
    1 6 oz can Tomato Paste
    7 medium potatoes, boiled in salted water
    1/4 C Buttermilk, lowfat
    1/4 C Milk, nonfat
    1/4 C Olive Oil
    1 t Salt, 1 tsp (remove)
    1 t white pepper
    1 pkg. frozen peas 10 oz
    1 sprig fresh thyme

Directions

Preheat oven to 350. Brown ground turkey in olive oil, adding seasonings, tomato paste and diced tomatoes, and frozen peas. Cover and simmer.
Drain boiled potatoes and mash with olive oil, buttermilk, milk, and olive oil. Add salt and white pepper to taste.
Into a baking dish, spoon the meat mixture, topping with mashed potatoes. When potatoes are lightly browned on top, remove.

Serving Size: This is dense, so you can easily manage 12-16 servings.
