Number of Servings: 4

Ingredients

    Spaghetti Squash, 2 cup
    Ground beef, lean, 16 oz
    Spinach, fresh, 2 cup
    Egg, fresh, 6 large

Directions

Layer already cooked spaghetti squash on the bottom of the pie pan. Mash it down and spread it around to make a "crust". Dump spinach on top of that. Dump already cooked and seasoned beef on top of the spinach. And then add beaten eggs on top of that. Tuck the spinach down to make sure everything is covered in egg. Put in oven at 350 for about 20 minutes. Then watch it from there. Once the top eggs start firming up you can broil it for a few minutes to get a nice color and crispness.
