Ingredients

    1 med onion, sliced
    1 red pepper,sliced
    1 orange pepper, sliced
    1 yellow pepper,sliced
    1 med zuccini, sliced
    1 9oz bag cooked shrimp
    1 heart of Romaine lettuce, chopped
    3 oz grape tomato, sliced in half
    Lime dressing

Directions

chop peppers, onions, zuccini and roast in pan with olive oil on med-hi heat. Remove from pan.
cook shrimp until hot in same pan sprayed with olive oil cooking spray. Add garlic.
put lettuce, tomato in large bowl. Add roasted veggies and shrimp. Drizzle with lime dressing and serve. makes 3 servings.
