Introduction

My husband is part Czech so this is a favorite family dish. I entered it in to see how healthy it actually is, and considering I listed half the salt it calls for in the original recipe for the dumplings, it isn't too bad for a person on a salt restricted diet. Ingredients

    3 lb boneless, skinless chicken brasts, cut into 2"x2" pieces
    1 med. onion, chopped
    2 Tblsp butter or margarine
    2 tsp sweet paprika
    1 c. lowfat sour cream
    1/4 c flour
    1/2 c 1% milk

    DUMPLINGS:
    2 1/2 c flour
    2 eggs
    1/2 tsp salt
    3/4 c water
    3/4 c 1% milk

Tips

This is a delicious and hearty chicken paprika. Instead of adding butter to dumplings, we like to cool them immediately under cold water. This sets the dumplings well and gives them a good firm consistency.


Directions

In a 6-quart pot, saute onion in butter; add paprika. Add chicken pieces and brown for 10 minutes. Next, add enough water to cover chicken, cover pot and cook about 3/4 hour until chicken is tender. In a separae bowl, blend flour, milk and sour cream. remove 1/2 cup chicken broth and add to sour cream mixture. Add this to chicken. Simmer an additional 15 minutes, stirring occasionally.

DUMPLINGS: In large mixing bowl, combine all ingrediens to form eleastic-consistency dough. Beat well. Drop by taspoonfull into large pot filled 3/4 full with boiling water and 1/2 tsp salt. Cook about 5 minutes. When dumplings float to top, remove with strainer into separate bowl. Add butter.

Serve chicken and gravy over dumplings.
