Ingredients

1 tbsp vegetable oil
1 yellow onion, chopped
2 carrots, chopped
8 cups vegetable broth
2 cups dry lentils
1/4 cup freshly squeezed lemon juice
1 tbsp garlic powder (NOT garlic salt)
1 tbsp onion flakes
Tips
Do NOT add additional salt, as vegetable broth is usually high in sodium. If you'd prefer a soupier stew, remove stew from heat after simmering for 45 minutes.
Directions
In a large pot, heat your olive oil. Add onions and carrots, and sautée until the onions are translucent. Add lentils, veggie broth, lemon juice, garlic powder, and onion flakes.
Bring to a simmer, and then cover. Cook for 45 minutes, and then uncover and cook for half an hour. When most of the liquid has boiled down, the stew is ready. Add more seasoning to taste.
