Ingredients

    8 oz Chicken Breasts
    1 qt Chicken Stock
    1 qt water
    2 bay leaf
    1 tsp dry thyme
    2 Clove Garlic, minced
    3 med Carrots, minced
    2 Stalks Celery, minced
    1/4 Lg Onion, minced
    1 Bunch Kale, chopped
    2 C chopped Zucchini
    3 Red Potatoes, cubed
    Salt & Pepper

Tips

I chop all veggies in the food processor excluding potatoes and zucchini to save time and speed up cooking. Sprinkle with grated Parmesan for some extra flavor!


Directions

Cook chicken in water and stock seasoned with bay leaves, thyme, salt and pepper until tender. Remove and cool slightly - break up into chunks. Add next seven ingredients and cooked chicken into stock. Simmer until tender. Taste for seasoning.
