Ingredients

    1 small onion sliced
    dash salt and pepper
    1 tbsp curry powder ( to taste, start with 2 tsp)
    4 chicken breasts, boneless, skinless
    1 cup low fat evaporated milk
    2 tbsp Sour cream, Gay Lea low fat
    Oil spray (or Pam)

Tips

Serve with rice and peas. Can saute cut up apples and/or raisins with the onion as well.


Directions

Spray pan with oil (I use Pampered Chef spritzer with olive oil.) Stir fry chicken until done. Remove to plate. Spritz pan with a little more oil, stir fry onion with a dash of salt and pepper. Stir in curry powder, chicken, evaporated milk. Simmer for a few minutes. Stir in sour cream and serve.
